Recipe no.4 - Pineapple Delight

Ingredients

for the shell/crust

  • 1 cup flour
  • 1/2 cup butter
  • bake at 325F for 25 minutes

for the filling

  • 1 can crushed pineapple
  • 1/2 cup icing sugar or granulated sugar
  • 2 tbsp cornstarch
  • 2 tbsp butter

for the meringue

  • 2 egg whites
  • 1/2 cup sugar
  • pinch of salt
  • 1 cup fine coconut
  • 1 tsp vanilla

Instructions

  • Prepare the filling
    • bring pineapple and sugar to a boil
    • mix cornstarch and water until smooth
    • stir into hot pineapple
    • cook gently and add butter
    • take off the heat and let it cool
  • spread onto the crust
  • mix the ingredients for the meringue; whip until stiff
  • spread the meringue on the pineapple
  • back at 350F for 20 minutes and nicely brown
  • let cool, sprinkle with sugar
