Ingredients
for the shell/crust
- 1 cup flour
- 1/2 cup butter
- bake at 325F for 25 minutes
for the filling
- 1 can crushed pineapple
- 1/2 cup icing sugar or granulated sugar
- 2 tbsp cornstarch
- 2 tbsp butter
for the meringue
- 2 egg whites
- 1/2 cup sugar
- pinch of salt
- 1 cup fine coconut
- 1 tsp vanilla
Instructions
- Prepare the filling
- bring pineapple and sugar to a boil
- mix cornstarch and water until smooth
- stir into hot pineapple
- cook gently and add butter
- take off the heat and let it cool
- spread onto the crust
- mix the ingredients for the meringue; whip until stiff
- spread the meringue on the pineapple
- back at 350F for 20 minutes and nicely brown
- let cool, sprinkle with sugar
