Ingredients
- 40 pounds of ground pork
- 10 pounds of ground beef (not lean)
- 12 oz salt
- 2 oz chilli powder
- 2 oz black pepper
- 4 tbsp fresh garlic, crushed
- sausage casings; need size 32 - 38mm
Instructions
- mix all ingredients
- first mix the pork and beef; ensure the beef is evenly distributed
- sprinkle with salt, pepper, chilli and garlic
- mix to ensure spices are evenly distributed
- repeat until all spices are used up
- you will need a sausage stuffer (available on Amazon.ca for about $36 CAD).
- fill the sausage stuffer with the mixed ingredients
- put a casing on the stuffer
- turn the handle and fill the casing with no gaps
- put in the fridge for a few days to let them dry out a bit
- put in the freezer afterwards
- cook them as usual in a frying pan
