Recipe no.18 - Italian Sausage

Ingredients

  • 40 pounds of ground pork
  • 10 pounds of ground beef (not lean)
  • 12 oz salt
  • 2 oz chilli powder
  • 2 oz black pepper
  • 4 tbsp fresh garlic, crushed
  • sausage casings; need size 32 - 38mm

Instructions

  • mix all ingredients
    • first mix the pork and beef; ensure the beef is evenly distributed
    • sprinkle with salt, pepper, chilli and garlic
    • mix to ensure spices are evenly distributed
    • repeat until all spices are used up
  • you will need a sausage stuffer (available on Amazon.ca for about $36 CAD).
  • fill the sausage stuffer with the mixed ingredients
  • put a casing on the stuffer
  • turn the handle and fill the casing with no gaps
  • put in the fridge for a few days to let them dry out a bit
  • put in the freezer afterwards
  • cook them as usual in a frying pan
